            Today's Snack: Here's a healthy, warm snack to share at your next Book Club meeting. Kids will enjoy peeling and grating the carrots, and chopping the onion, but tools are sharp, so make sure to have adult supervision. You can ladle this soup into mugs or doubled-up paper or Styrofoam cups (a single layer may be too hot to hold), and serve with a sliced loaf of crusty bread and real butter. Mmmmm!

 

Carrot and Parsley Soup

 

2 oz. butter or margarine

1 C. carrots, peeled and grated

1 small onion, finely chopped

2 T. fresh parsley, chopped

¼ C. lentils

4 C. chicken stock

Salt and pepper to taste

 

 

            Melt butter in a saucepan. Cook the carrot and onion for 4 minutes over medium heat. Stir in the lentils. Cook another 2 minutes. Add the chicken stock. Bring to a boil. Cover. Simmer gently for 20 minutes or until lentils are tender. Just before serving, stir in the parsley and season with salt and pepper. Makes 4 servings.

            Once you've started your book club and put together a nice-sized group, the next step is to find a reliable source of interesting, affordable books.

 

It would be nice to get them for free, but that's a tall order. Most school libraries and public libraries aren't likely to have enough of the same books on hand for your club to all read the same book at the same time.

 

So you might have to purchase them new, or through a used book Internet site.

 

Often, parents, your school's corporate partner, or nonprofit organizations can pay for the books. Or you can have a bake sale or other fund-raiser to cover the costs.

 

            For many book clubs, the best choice of all is for the book club to join a . . . book club! That way, you can get enough books together to serve the group's needs, and for less money than if you buy the books separately.

 

There are many book clubs like this, put together to offer discounts on books that various types of readers would like.
